Why We Feed a Christmas Cake

Feeding a Christmas cake is one of those quiet rituals that makes the season feel real. It is not fussiness for fussiness's sake. A rich fruit cake is dense, low in moisture and high in sugar, and a regular dose of alcohol does three useful things at once. It adds flavour that deepens over weeks, it keeps the crumb beautifully moist, and it acts as a natural preservative so your cake can sit happily for months without spoiling.

The magic happens slowly. Each feed soaks into the fruit and sponge, and the alcohol mellows from a sharp kick into something warm and rounded. A cake fed properly in October tastes noticeably better than one rushed together in December — and it will still be lovely on Twelfth Night.

How Much Alcohol to Add

The golden rule is little and often. You want to moisten the surface, not drown the cake. For a standard 20cm (8in) round or 18cm (7in) square cake, use 1 to 2 tablespoons (15–30ml) per feed. Any more and the base can turn soggy and the flavour becomes harsh rather than rich.

Traditional choices work best:

  • Brandy – the classic, warm and mellow
  • Dark rum – adds a lovely caramel sweetness
  • Sherry or Madeira – lighter, subtly nutty
  • Whisky or bourbon – a smokier, bolder result
  • Port – sweeter and fruitier, though slightly less preserving

You can also use a mix, but stick to one style so the flavours do not fight. If you would rather avoid alcohol, warm apple juice, orange juice or cooled strong tea work well too — just feed a little more often and store the cake in the fridge if you live somewhere warm.

How Often to Feed

Timing depends on when you baked. As a rough guide:

  • Baked in September or early October – feed once a week for the first four weeks, then fortnightly
  • Baked in November – feed weekly right up until you decorate
  • Baked in December – feed twice in the first week, then weekly

Prick the top of the cake all over with a fine skewer or cocktail stick first. This lets the alcohol seep down rather than sitting on the surface. Spoon it over evenly, letting it trickle into the holes. Always feed the top only — the base stays put, so the moisture works its way down naturally.

Stop feeding about a week before you plan to decorate. This gives the surface time to dry slightly so marzipan and fondant can grip properly. A wet, boozy top is a slipping hazard for icing.

Where to Store Your Cake

Once fed, wrap the cake well and put it somewhere cool, dark and dry. A cupboard away from the oven, a spare room or a cool pantry is ideal. Aim for a steady temperature — sudden warmth and cold are the enemy.

Wrap in a double layer of greaseproof paper, then a layer of foil, or use a clean cotton cloth followed by foil. Cling film alone can trap condensation and encourage mould. Then place the wrapped cake in an airtight tin or a sturdy cake box with a tight lid. If you are keeping it for several months, check it every few weeks. If the paper looks damp, replace it. If you spot a patch of mould, cut it away with a generous margin and re-wrap.

Do not store your cake in the fridge unless you have used a non-alcoholic feed or live in a very humid climate. Cold dries out the crumb and dulls the flavour.

When to Stop and Start Decorating

Plan your final feed for around one week before decorating. Brush off any loose crumbs, then apply a thin layer of warmed apricot jam to help the marzipan stick. Let the marzipan dry for two to three days before adding fondant or royal icing, and give the finished cake another day or two to settle before serving.

If you are short on time, a simple dusting of icing sugar, a few whole nuts and glace fruits, or a ribbon around the sides looks wonderfully traditional and takes minutes. Your well-fed cake will taste so good that nobody will mind how fancy the top is.

Quick Troubleshooting

  • Cake feels dry: feed a little more often and check your wrapping is airtight
  • Too boozy: skip a feed or two and let it mellow for a fortnight before icing
  • Slight white bloom on the surface: usually sugar crystals, not mould — wipe gently with a cloth dipped in a little alcohol
  • Sticky top: leave unwrapped for a few hours in a cool room before icing

Treat your cake kindly through the autumn and it will reward you on Christmas Day with a slice that is dark, fragrant and wonderfully moist. Happy baking.
